Abstract

Proteinase K is a kind of important serine protease which has a variety of application in biological science research and biological processing process and has an important potential application in the food and feed industry.In this paper, the molecular structure, catalytic properties of proteinase K, directed evolution, and the latest progress in the study of recombinant expression and application were summarized and the research direction of proteinase K in the future was prospected.
