Juice orange pulp is one of the main byproduct after juice extraction, which is rich in nutrients especially dietary fiber.Enlarging the research and application of its fiber could realize full use of resources as well as the demand of balanced nutrients to people.It analysised briefly the composition and nature of dietary fiber in juice orange pulp, and summarized main factors affecting the change of its components and its application in food industry, which could establish the foundation for further research.
