Nutritional components analysis of Thunnus albacares bone

  • The nutritional components of the Thunnus albacares bone including its general components, amino acid, fatty acid and mineral elements were determined.As results, the contents of protein, ash and fat in the Thunnus albacares bone were 57.2%, 33.1%and 8.0%respectively.Its amino acid content was 26.6%, among which the ratio of EAA was 24.89%.The ratio of unsaturated fatty acid and saturated fatty acid in fish bone oil were 39.58%and 56.54%, and DHA and EPA were 15.89%and 1.79%.There were 17 kinds of mineral elements in the Thunnus albacares bone, the content of Ca and P were 5.27%and 2.89%.Other mineral elements including Na, Mg, Zn, Fe etc were also determined.Therefore, the Thunnus albacares bone have many nutritional components and it's utilize is valuable.
