Optimization of technological conditions of tilapia scraps enzymatic hydrolysates chelated with zinc by quadratic regression orthogonal rotary

  • In order to optimize the chelating conditions of tilapia scraps enzymatic hydrolysates and the zinc sulfate, based on the single factor test, quadratic regression orthogonal rotary method was chosen, and best results were obtained:AA/Zn 2+ ratio 2.70∶1, temperature 71.3℃, time 15min, pH6.86. By best conditions, the rate of chelation reached 87.56% , and the important order of each factors was:AA/Zn 2 + ratio >pH >temperature > time.
