Influence of metal ion effect on yak body-fat during initial autoxidation stage

  • The aim of the this paper was to study influence of TBARS treated with different metal ion during initial yak fat autoxidation. The result showed that the changes of TBARS treated with 0.1mol/L Cu2 +over 0.5mg/kg and significantly increased the level of TBARS at 25d (p<0.05) , which could be used as indicating concentration for decreasing oxidation. TBARS treated with 1mol/L Fe2+reached 0.5mg MDA/kg which was lower than others (p<0.05) at 20d. However, it was same result for TBARS treated by different concentration of Ca2+, which was near to CK (p>0.05) . Effect of oxidation treated by each concentration of Mg2+was weaker than by Fe2+. The conclusion should be relevance valuable for choosing metal chelating agent and mixed antioxidants in the future.
