Application of enzymatic hydrolysis in the processing of fish waste

  • Enzymatic hydrolysis is a method with mild conditions, high efficiency and safety. It has been widely used in the processing of fish wastes and the extraction of active ingredients. The article is making a comprehensive introduction of the application of enzymatic hydrolysis in the further processing of fish wastes (include fish skin, fish head, fish bones, fish scales and fish visceral) and discussing the development direction of enzymatic hydrolysis in the processing of fish waste. It offered the scientific basis for the industrialization of comprehensive utilization of the fish wastes.
