Isolation and screening of lactobacillus strains for producing γ-amino butyric acid

  • Two strains were isolated from pickled Chinese cabbage and then purified.Strains were numbered LpL328, ST328 and the former was proved to have a property to produce γ-amino butyric acid (GABA) .LpL328 strain was identified Lactobacillus plantarum by morphological observation and physiological and biochemical tests.The strain was inoculated into fermentation medium, then cells were collected and made into acetone powder.GABA was produced by reaction of acetone powder with substrate sodium glutamate.The content of GABA was 2.16g/L.
