Research of preparation and properties of immobilized fructosyltransferase

  • To recycle easily and reuse fructosyltransferase for producing fructooligosacchari-des with its excellent catalytic properties, fructosyltransferase was immobilized on resin of HPA25L.The optimum operation parameter was examined, and the optimum conditions for the immobilization were obtained as follows:glutaraldehyde 0.15%, temperature 20℃, pH5.0 and fructosyltransferase 10mL/g (resin) .Under these conditions, the total recovery percentage of the immobilized enzyme specific activity was above 81%.And the optimum operation pH and temperature of immobilized enzyme were 55℃ and 7.0 respectively.After 12 times reused, the activity of immobilized enzyme retained more than 20%.
