Study on antioxidant activity of grape seed extract in vitro

  • Antioxidant activities of grape seed extract were evaluated by the scavenging rate of DPPH radical, the scavenging rate of hydroxyl radical, reducing power and the ability of chelating metal assay, in comparison of the natural antioxidant of VC, VE, catechin, propolis and the synthetic antioxidants of BHT, TBHQ and PG.The result showed the great effect on DPPH antiradical, reducing power and iron chelated of GSE compared with VE, BHT and propolis.Scavenging hydroxyl radical ability of GSE was less than those of VC, VE, BHT, catechins, propolis and TBHQ.The antioxidant mechanism of GSE was probable due to radical, reducing power and the chelation of metal ion.
