Hyperspectral imaging is a new technology which integrates the merits of both imageology and spectroscopy.The method can obtain spectral information and imaging information from an object simultaneously, which is a tendency of nondestructive inspecting technology for food industry in the future.The principle of the hyperspectral imaging system, the methods of image collecting and analyzing, the inspecting technology of food quality and safety by means of hyperspectral imaging were introduced in this paper, and the limitations at present stage and future development prospects were pointed out.
