Antibacterial activity of Escherichia coli by hydrolyzed from brewer's spent grains protein

  • To study the antibacterial activity of Escherichia coli by hydrolyzed from brewer's spent grains protein, four proteases was used in different hydrolysis time and antibacterial ability of hydrolysis was detected.The results showed that hydrolysis had better inhibition ability of Escherichia coli with Alcalase in 150min.Peptides was separated and tested with polyamide column chromatography, ion exchange column chromatography, and gel column chromatography.Molecular weight was about 1392.58u.The minimal inhibitory concentration for Escherichia coli was 1%.
