Abstract:
Muscle nutrients of
Ovalipes punctatus and
Scylla serrata were studied by general nutritional test. The results showed that the ratio of essential amino acids to total amino acids in the muscles of
Ovalipes punctatus and
Scylla serrata were 37.83% and 34.32% respectively in 18 amino acids of those two kinds of crab,and their proportions were both in accordance with the evaluation criteria of United Nations Food and Agriculture Organization World Health Organization. The essential amino acid index(EAAI)of the muscle of
Ovalipes punctatus was 59.80,while that of
Scylla Serrata was 68.27,which hod higher nutritive value than
Ovalipes punctatus. The first restrictive amino acids in the muscle of
Ovalipes punctatus and
Scylla serrata were both valine. The content of saturated fatty acids in the muscle fatty acids of
Ovalipes punctatus was 22.97%,which was significantly higher than that of
Scylla serrata(16.64%). Polyunsaturated fatty acids were mainly EPA,and the total content of EPA and DHA were 17.90% and 11.75%,respectively. The content of Zn was abundant in two kinds of crabs with the ratio of Zn to copper significantly less than 10,indicating that the two were good sources of Zn supplement food.
Ovalipes punctatus was also a good source of Se supplement food. The researches showed that both two kinds of sea crabs had high nutritional value,and there were also differences in some nutrients between them.
