Abstract:
γ-aminobutyric acid(GABA),a four-carbon non-protein amino acids,is widely presented in plants,animals and microorganisms and has multiple physiological functions. Its function and effect on human health attracted widespread attention. In recent years,GABA obtained more extensive application in food industry. At present,plant accumulation and microbial fermentation are taken to accumulate GABA,which make better applications in the organisms. Recent advances in the formation mechanism and accumulation methods of GABA in plants and microorganisms were reviewed in this paper.
