微生物包埋技术的研究进展

Review on the microencapsulation technology of embedding microorganism

  • 摘要: 微胶囊这种新型技术已经广泛应用到油脂抗氧化、食品风味物质保存、医药控制释放、食品发酵以及益生菌制品等相关领域当中。本文根据不同的工艺原理对微生物进行微胶囊包埋的方法分类,并评价包埋方法和壁材对微生物存活性的影响以及微胶囊产品对微生物的保护作用。微胶囊壁材材料作为微胶囊产品的主要功能成分不仅要能为微生物提供物理保护,同时对微生物营养物质和代谢物物质扩散具有较高的传质效率。 

     

    Abstract: Microencapsulation is a new technology that has been widely used in oil,favors,pharmaceutical controlled release among relative industry. This review focused mainly on the different microencapsulation technology by various encapsulated method.And the process and protection of microencapsulation that has effect on the microorganism was evaluated in this review. Moreover,the materials of capsule wall that have importantly functional role not only provide the protective effect,but also those improve the efficiency of mass transfer of nutrients and metabolic substances.
