瓜蒌籽中脂肪酸组成型态及抗氧化活性

Fatty acid composition and antioxidant activity of seed oil from Trichosanthes kirilowii

  • 摘要: 采用气相色谱-质谱(GC-MS)联用技术,结合甲基化处理方法,对瓜蒌籽油中总脂肪酸、结合态脂肪酸(脂肪)和游离脂肪酸进行分析测试,并对其自由基清除能力进行了研究。结果显示:瓜蒌籽富含油脂,出油率达52%,其中以结合态脂肪酸为主,占总脂肪酸的99%;不饱和脂肪酸占总脂肪酸的83.3%,主要成分为亚油酸、油酸和亚麻酸;抗氧化活性实验表明,当瓜蒌籽油在浓度为1.0mg/mL时,对羟基自由基清除率达95.0%,其对羟基自由基的清除率具有量效关系。因此,瓜蒌籽油为一种富含结合态不饱和脂肪酸的植物油,可作为功能性食用油脂来开发利用。 

     

    Abstract: The total fatty acids, bound and free fatty acids of seed oil from Trichosanthes kirilowii were identified by GC-MS technique together with method of methylation reaction, and the scavenging capacity of free radical were analyzed. The results showed that the seed of T.kirilowii was rich in fatty oil and its oil yield ration could reach 52%, the bound fatty acids (99%) were dominant component in the total fatty acids. Unsaturated fatty acids accounted for 83.3%, the main constituents were Linoleic acid, Oleic acid (9-Octadecenoic acid) and (Z, Z, Z) -9, 12, 15-Octadecenoic acid. The results of antioxidant activities showed that the seed oil had doeseffect relationship in scavenging activities of hydroxyl radical in vitro and the hydroxyl radical scavenging rate of 95.0% was observed at the concentration of 1.0mg/mL. In conclusion, the seed oil of T. kirilowii which was rich in unsaturated bound fatty acids should be a kind of functional edible oils for developing health foods.
