Abstract:
In order to further improve the pulse electric field food processing sterilization, considering the conductivity, pulse generator waveform and pulse energy, the influence of the electrical conductivity of liquid food in high voltage pulse sterilization system were analyzed in this paper. The test results showed that in a certain voltage, conductivity had a great influence on the rising edge of the pulse waveform time, changing the conductivity would change the input energy of a single pulse, also change the temperature of the liquid in the treatment chamber, thereby affects sterilization effect. For the equal energy input, low conductivity liquid ratio had higher kill microorganisms advantage than high conductivity liquid.
