植物中花青素提取方法探讨

Study on the extraction methods of anthocyanins in plants

  • 摘要: 花青素是一种广泛存在于植物中的天然色素,由于种类丰富、来源广泛、天然安全并具有优异的抗氧化等功效而受到研究者的普遍关注。文章对目前花青素传统溶剂提取方法及微波、超声、加压辅助提取方法的相关研究进行了介绍,并分析了各种方法的优缺点,对提取方法的发展方向和趋势进行了展望,旨在为花青素资源的开发利用和工业化生产提供依据。 

     

    Abstract: Anthocyanins is a widespread natural pigments in plants, which is subject to the concern of the researchers for its variety kinds, wide range of sources, natural and safe properties, and excellent antioxidant effect. The paper introduced the traditional solvent extraction methods and microwave, ultrasound, pressure assisted extraction methods. And the advantages and disadvantages of various methods were analyzed. The prospects for development trends of extraction methods were discussed, aiming at providing references for future application and industrial production of anthocyanins.
