Abstract:
As one of the non-thermal processing technologies, the pulsed electric field (PEF) technology has been a hot research topic in the area of food science and engineering in recent years.It shows great advantages on the sterilization, enzymic inactivation, active substances extraction and keeping greenness, nutrition and sanitation of food.The pulsed electric field (PEF) technology and its latest application in fruit and vegetable juice industry were reviewed, which would be helpful to the juice industrial production of using this technology.
