响应面法优化大黄鱼鱼卵油的酶法提取工艺

Optimization of Enzymatic Extraction Technology of Fish Roe Oil from Large Yellow Croaker by Response Surface Methodology

  • 摘要: 为有效提取大黄鱼鱼卵油,本研究在不同酶提取大黄鱼鱼卵油的基础上,筛选出碱性蛋白酶为最佳提取蛋白酶后,考察不同单因素对碱性蛋白酶法提取大黄鱼鱼卵油的影响,并采用响应面法对酶法提取大黄鱼鱼卵油工艺进行了优化。结果表明:酶法提取大黄鱼鱼卵油的最佳工艺为温度58.9℃、时间2.1 h、pH12.0,在此条件下大黄鱼鱼卵油提取率高达86.29%±0.04%。研究结果为大黄鱼鱼卵的进一步开发利用提供了科学依据。

     

    Abstract: In order to effectively extract the fish roe oil of large yellow croaker,alkaline protease was selected as the best protease for extracting fish roe oil from large yellow croaker based on different enzymes,and the effects of different single factors on the extraction of large yellow croaker roe oil by alkaline protease were investigated. The extraction process was optimized by response surface methodology. The optimum extraction conditions were determined as follows:Temperature 58.9℃,time 2.1 h and pH12.0. Under these conditions,the extraction rate of large yellow croaker roe oil was as high as 86.29%±0.04%. The results of this study provided a scientific basis for the further development and utilization of large yellow croaker roe.
