微生物来源的β-葡萄糖苷酶在食品工业中应用进展

Progress on the β-Glucosidase from Microganisms and Its Applications in Food Industry

  • 摘要: β-葡萄糖苷酶是一种用于改善食品风味或生产活性单体成分的重要酶制剂,广泛应用于食品、药品、保健品等领域。微生物来源的β-葡萄糖苷酶数量庞大,价格低廉,制备容易而且用途广泛,与植物来源的β-葡萄糖苷酶相比更容易获得高纯度的酶制剂。近年来微生物来源特别是食品微生物来源的β-葡萄糖苷酶受到广泛关注。本文主要综述了霉菌、酵母菌、乳酸菌和其他微生物来源的β-葡萄糖苷酶的生产菌株以及不同微生物生产的β-葡萄糖苷酶的理化性质、底物特异性,并总结和展望了β-葡萄糖苷酶在食品工业中的应用及其发展趋势,为微生物来源的β-葡萄糖苷酶工业化生产提供技术导向和理论依据。

     

    Abstract: β-Glucosidase,a well-known enzyme preparation,is very important and has been widely used in food,medicine,health industries due to the advantages of improving food flavor or producing active substances. β-glucosidases from the microbes has much more merits than it from plant,such as extensive sources,low price,easy to obtain and purify. In recent years,β-glucosidases from food microbial sources has attracted more attention. The characteristics of β-glucosidase from several sources including mould,yeast,lactic acid bacteria and other microorganism and its physicochemical properties and substrate specificity were summarized in this review. Furthermore,the development trend of β-glucosidase with the application in food industry was also prospected. In general,this paper provides the technology orientation and a theoretical basis for the industrial production of β-glucosidase from microbial sources.
