指示吸水垫托盘包装冷鲜猪肉的品质变化动力学模型及其货架期预测

Dynamic Model of Quality Change and Shelf-life Prediction of Cold Fresh Meat Packaged with Indicator Water Absorbing Pad

  • 摘要: 为了研究贮藏过程中,指示吸水垫托盘包装冷鲜猪肉的品质变化与贮藏时间的相关性,本文研究了冷鲜猪肉在不同温度下的品质变化及指示吸水垫的ΔE值变化,并对其TVB-N值和指示吸水垫ΔE值的数据进行拟合,建立了动力学模型,并建立以指示吸水垫ΔE值为终点的货架期预测模型。结果表明,指示吸水垫上的冷鲜猪肉的TVB-N值可以建立零级动力学模型,指示吸水垫ΔE值可以建立一级动力学模型。且建立的2个模型的拟合系数R2分别为0.9843(TVB-N值),0.9926(指示吸水垫ΔE值),并且其平均相对误差W分别为4.4%、2.9%,均小于10%。货架期达终点时,指示吸水垫ΔE值为20.731,其平均相对误差W为2%,小于10%。本文建立的模型可以预测5~35 ℃范围内冷鲜猪肉TVB-N值、指示吸水垫ΔE值的变化以及托盘包装冷鲜猪肉的货架期。同时以ΔE值作为终点时建立的货架期模型可以很好的预测冷鲜猪肉的货架期。

     

    Abstract: In order to study the correlation between the quality changes of cold fresh meat and storage time. In this paper,the quality change of cold fresh meat at different temperature and the change of ΔE value of indicating absorbent pad were studied. The data of TVB-N value andΔE value of indicating absorbent pad were fitted,and the dynamic model was established. A shelf life prediction model with ΔE value of indicating indicator pad as the end point was established. The results showed that the TVB-N value could establish a zero order kinetic model,and the ΔE value could establish a first-order kinetic model. The fitting coefficients R2 of the two models were 0.9843(TVB-N value)and 0.9926(ΔE value),respectively. The average relative error of was 4.4% and 2.9%,respectively,both less than 10%.At the end of shelf life,the ΔE value of indicating indicator pad was 20.731,and the average relative error was 2,which was less than 10%. The model established in this paper can predict the TVB-N value of cold fresh meat in the range of 5~35 ℃,indicate the change of E value of indicating absorbent pad and the shelf life of cold fresh meat in tray packaging. It shows that the shelf-life model based on ΔE value as the end point can predict the shelf-life of cold fresh meat very well.
