源于啤酒糟的阿魏酰低聚糖组成及其抗氧化活性分析

Composition and Antioxidant Activity Analysis of Feruloyl Oligosaccharides Produced from Brewer’s Grains

  • 摘要: 采用酶法酶解啤酒糟(Brewer’s spent grain,BSG)制备得到阿魏酰低聚糖(Feruloyl oligosaccharides,FOs),并对其组成及抗氧化性质进行测定。结果表明,FOs中键合态阿魏酸含量为3.06%(w/w),总糖含量为65.50%(w/w),单糖主要为木糖和阿拉伯糖,FOs固体样品经紫外光谱分析和红外光谱分析为糖酯类物质;FOs对羟自由基、DPPH自由基和超氧阴离子自由基均具有良好的清除能力,且还原力都优于阿魏酸和低聚木糖。在8 mg/mL时,对羟自由基、DPPH自由基和超氧阴离子自由基的清除率分别为79.40%、84.40%和59.40%,还原力为1.22。

     

    Abstract: Feruloyl oligosaccharides(FOs)were prepared by enzymatic hydrolysis of brewer’s spent grain(BSG). The composition and antioxidant activities of FOs were determined. Results showed that,the ferulic acid content was 3.06%(w/w),the total sugar contents was 65.50%(w/w)in FOs. The sugar composition was xylose and arabinose. The solid samples of FOs were analyzed by ultraviolet spectroscopy and infrared spectroscopy,it was proved that solid sample was sugar esters. FOs had good scavenging capacity against hydroxyl radicals,1,1-diphenyl-2-picrylhydrazyl(DPPH)free radicals and superoxide anion radicals,and the reducing power was superior to that of ferulic acid and xylooligosaccharides. At 8 mg/mL,the scavenging rates of FOs on hydroxyl radicals,DPPH free radicals and superoxide anion radicals were 79.40%,84.40% and 59.40%,respectively,and the reducing power was 1.22.
