Research progress on γ-aminobutyric acid accumulation in soybean and its product development

  • 摘要: 大豆作为世界范围内重要的豆类作物,是人类饮食的重要营养来源。γ-氨基丁酸(γ-aminobutyric acid,GABA)作为大豆中与人体健康密切相关的重要营养因子及非蛋白质氨基酸,其含量较低且富集过程受多种因素的影响,进而影响其保健功能的发挥及相关制品的品质提升,因此研究大豆中GABA富集的影响因素及其产品开发,对于指导大豆GABA富集及高效利用具有重要意义。本文综述了近年来有关大豆GABA富集的主要影响因素及富含GABA大豆产品的开发研究进展,并分析了领域内现存问题,对后续研究趋势进行展望,以期为大豆GABA富集及产品开发提供理论依据。

     

    Abstract: Soybean as an indispensable legume in the world is an important source of nutrients for human diet. γ-aminobutyric acid (GABA)as an important health-related nutritional factor and a non-protein amino acid, its natural content in soybean is quite low and it's accumulation could be affected by many factors, which will influence the full play of GABA functions and the quality promotion of GABA-enriched soybean products. Therefore, it's quite significant to study the influence factors of GABA accumulation and the development progress of its products in soybean for the guidance of accumulation and effective utilization of GABA in soybean. In this paper, the latest research progress of the main influence factors of GABA accumulation in soybean and its product development were reviewed. The existing problems in the field was analyzed and the research emphasis in the future was forecasted, in order to provide theoretical basis for the research on soybean GABA accumulation and GABA-enriched soybean product development.
