植物源食品中叶酸的生物合成与调控及其提取与检测技术研究进展

Research progress of biosynthesis and metabolic regulation of folate in plant-based food and its extraction and detection techniques

  • 摘要: 叶酸作为一碳代谢时的辅因子,是生物体的必需物质,对人体健康至关重要。本文综述了植物源食品中叶酸的类型与结构、叶酸合成途径及相关酶、叶酸代谢调控、发芽富集技术、叶酸提取与检测技术,并对开发快速而准确的叶酸测定方法、研发植物性食品中叶酸的富集与提取技术进行了展望。

     

    Abstract: Folate is necessary for almost all organisms, and is especially essential for human health due to its functionality as cofactor in carbon metabolism. In this review, the research progress of the type and structure of folate in plant-based food, the biosynthesis route and related enzymes, metabolic regulation, germination enrichment technique, extraction and detection techniques of folate were summarized. Furthermore, the rapid and accurate method for the folate determination and the enrichment and extraction of folate in plant food were also prospected.
