萌发预处理辅助水酶法提取大豆蛋白及油脂

Optimizing germination pretreatment conditions for extraction of soy oil and protein by aqueous enzymatic method

  • 摘要: 本研究采用萌发预处理方法辅助水酶法提取大豆蛋白及油脂,通过响应面优化实验确定了大豆油脂水酶法提取的最优萌发处理工艺为:萌发温度26℃、萌发湿度71%、萌发时间43 h,在此条件下油脂及蛋白提取率分别高达92.42%、91.91%。萌发预处理技术可大幅提高水酶法大豆蛋白及油脂提取率,萌发预处理技术作用效果强于粉碎、超声等预处理技术。 

     

    Abstract: Germination pretreatment was used to assist extraction of soy oil and protein by aqueous enzymatic method. The optimal condition of germination pretreatment condition was determined as follows: germination temperature 26 ℃,71%humidity,43 h pretreatment time.The oil and protein extraction rate were 92.42% and 91.91% under the optimal condition.Germination pretreatment could significantly increase the oil and protein extraction rate by aqueous enzymatic method,this pretreatment had a better treatment effect than grinding and ultrasonic treatement.
