乳酸菌胞外多糖的分离纯化和结构解析

Isolation,purification and structure identification of exopolysaccharides produced by lactic acid bacteria

  • 摘要: 乳酸菌胞外多糖具有独特的理化性质和生物学活性,对其理化性质和结构进行研究并阐明结构与功能的关系具有重要的意义。本文介绍了乳酸菌胞外多糖的分类及组成,针对目前胞外多糖的分离纯化方法、理化性质测定方法、结构鉴定方法进行了详细描述,并对今后胞外多糖的研究内容和研究方向进行了展望。 

     

    Abstract: The exopolysaccharides( EPSs) of lactic acid bacteria( LAB) have unique physicochemical properties and biological activities,and it is of great significance to study the physicochemical properties and structure of the EPSs and to elucidate the relationships between structure and function.This review introduced the classification and composition of EPSs,as well as summarized the available information on procedures and methods used for research on this topic. The information provided deals with methods for isolation and purification of EPSs,the physicochemical properties and structure identification. The research contents and orientation in the future were also discussed.
