臭氧降解稻谷中不同黄曲霉毒素B1初始含量效果研究

  • 摘要: 针对黄曲霉毒素B1(AFTB1)污染造成的食用安全性问题,研究了稻谷储藏过程中AFTB1含量随时间和黄曲霉量的变化规律以及臭氧降解率与稻谷中AFTB1初始含量的关系。结果表明:30℃时,16.0%水分的稻谷AFTB1含量(X)与储藏时间(T)呈极显著的抛物线型关系,回归方程为X=3.958T2-30.523T+45.049(R2=0.945,p<0.01),与黄曲霉量(M)呈正线性关系,回归方程为X=3.031E-005M+12.311(R2=0.955,p<0.01)。随着稻谷中AFTB1的初始含量增加,臭氧处理后的毒素降解率呈先上升后下降,降解率最大达到88.1%,在给定条件下,可将含68.42μg/kg AFTB1的稻谷降解到国家限量标准(10μg/kg)。 

     

    Abstract: For food safety problems caused by aflatoxin B1( AFTB1) pollution the paddy,the change lows of content of AFTB1 with the time and amount of Aspergillus flavus and the relationship between the initial content of AFTB1 and degradation rate by ozone were investigated in storage of paddy.The results showed the content of AFTB1( X)was significantly parabolic relationship with storage time( T) and positive linear relationship with counts of Aspergillus flavus( M) in 16.0% moisture content of paddy at 30 ℃,and the regression equations were X = 3.958T2-30.523 T + 45.049( R2= 0.945,p < 0.01) and X = 3.031E- 005 M + 12.311( R2= 0.955,p < 0.01),respectively.The detoxification rates of AFTB1 rose in the first stage,and then decreased with the increase of the initial content of AFTB1 in paddy.The maximum degradation rate of AFTB1 was 88.1%,and the paddy with AFTB1of68.42 μg / kg was reduced to the national limited standard( 10 μg / kg) at given conditions.
