充气包装技术在鱼腥草保鲜中的研究

Study on technology of modified atmosphere packing in fresh-maintaining of herba houttuyniae

  • 摘要: 目的:为寻求简单、高效的保鲜方法,研究了不同充气比例的包装对鱼腥草的保鲜效果。方法:首先在起始气体成分为8%O2和30%CO2的充气包装下,于不同温度贮藏30 d,筛选鱼腥草最佳的贮藏温度,进一步考察不同充气包装在贮藏期间(30 d)对各种生化指标的影响,从而得到最佳保鲜条件。结果:不同充气比例包装之间相比,CO2浓度占起始气体较低的充气包装能极显著(p<0.01)维持多酚氧化酶的活性和减少在溶液中的电导率,8%O2和30%CO2的充气包装极显著(p<0.01)抑制丙二醛含量上升、抑制过氧化氢酶和过氧化物酶的活力、维持多酚和黄酮含量的稳定。结论:在2℃、8%O2和30%CO2的充气包装下,鱼腥草保鲜效果最佳。 

     

    Abstract: Abject :In order to explore a convenient and efficient preservation method,the effects of different modified atmosphere packings on fresh-maintaining of herba houttyniae was investigated. Methods:Under the modified atmosphere packing with initial compositions containing 8% O2 and 30% CO2,herba houttyniaes were storaged at different temperatures for 30 days so that the optimal storage temperature was selected. In addition,effect of different modified atmosphere packing on all kinds of biochemical indexes were further investigated during the storage of 30 days so that the best preservation condition could be known. Results:Compared between the different modified atmosphere packings,the modified atmosphere packing with relatively low carbon dioxide concentration in initial compositions significantly(p<0.01) sustained the activity of polyphenoloxidase( PPO) and decreased the electrical conductivity in solution. The modified atmosphere packing with initial compositions containing 8% O2 and 30% CO2significantly(p<0.01) decreased the contents of malondialdehyde increasing,inhibited the activity of catalase(CAT) and peroxidase(POD),sustained the stable contents of total phenolic and flavones. Conclusion:The best fresh-maintaining condition and optimal storage temperature of herba houttyniae was 8% O2+30% CO2 and 2 ℃ respectively.
