Non- thermal sterilization technologies and its application in processing of aquatic products

  • 摘要: 本文综述了国内外水产品非热杀菌技术研究进展,介绍了超高压杀菌、臭氧杀菌、酸性电解水杀菌、辐照杀菌、高密度CO2杀菌和生物杀菌等非热杀菌技术的作用原理、特点及其在水产品加工中的应用进展,并分析了非热杀菌技术的发展趋势,为其在水产品加工贮藏中的应用推广提供参考。 

     

    Abstract: The research progress in non- thermal sterilization technologies in the processing of aquatic products was reviewed in this paper. The essay mainly introduced the principles, features and application of several non-thermal sterilization technologies in the processing of aquatic products, such as ultra- high pressure technology, ozone sterilization, acidic electrolyzed water sterilization, irradiation sterilization, dense phase carbon dioxide sterilization and biology sterilization. Finally, the prospects of non- thermal sterilization technologies were briefly discussed.The article is hoped to offer beneficial reference for the future application research and the wider application of non- thermal sterilization technologies in the processing of aquatic products.
