枸杞及制品中类胡萝卜素与其在加工过程中的稳定性研究进展

Research advance in carotenoids from wolfberry fruit and production and corresponding processing stability

  • 摘要: 对枸杞及制品中类胡萝卜素的分类、功能活性、加工稳定性及检测方法进行了全面系统的介绍,旨在为枸杞在生产、加工、贮藏过程中提供技术支持,为枸杞保健品的进一步开发提供理论依据。并在此基础上,对枸杞及制品中类胡萝卜素今后的研究方向进行了展望。 

     

    Abstract: The classification,functional activity,processing stability and detection method of carotenoids in wolfberry fruit and production were introduced. The aim of this work was to provide a technical support for wolfberry fruit during production,processing and storage,and theory basis for further development of wolfberry fruit health products.Based on these,the outlook of the tendency of carotenoids in wolfberry fruit was put forward.
