食品中重金属镉污染状况及其检测技术研究进展

Research progress in pollution of heavy metals cadmium and its detection technology in food

  • 摘要: 镉是一种蓄积性的重金属元素,对人体的肾脏、骨骼、消化系统等组织都可产生不可逆的损害作用,给人体健康带来威胁。本文简述了我国目前食品中重金属镉的污染情况及其来源与危害,比较了国内外对食品中重金属镉的限量标准,并对食品中重金属镉的检测技术及发展趋势进行了分析与展望,以期为食品中镉的控制、监督和检测提供借鉴和参考。 

     

    Abstract: Cadmium is a kind of heavy metal ions which can cause irreversible damage to human kidney, skeletal and digestive system. Heavy metal cadmium pollution in food and its source and harmfulness were briefly described in this paper. And then the limitation standard in China was compared with others regarding their rationality, analysis technologies for the heavy metal in food have been presented and discussed in order to provide reference for controlling, supervising or detecting of cadmium in food.
