高山被孢霉生产多不饱和脂肪酸发酵条件的研究进展

Research progress in fermentation condition for polyunsaturated fatty acids by Mortierella Alpina

  • 摘要: 高山被孢霉能发酵生产多不饱和脂肪酸如花生四烯酸等,具有安全性好、产率高、生产易控制等优点,适宜于工业化生产。本文论述了高山被孢霉产多不饱和脂肪酸发酵条件的研究进展,着重于论述发酵过程中碳源、氮源、溶解氧及培养条件等对产物产率的影响作用研究。 

     

    Abstract: Mortierella alpina can produce polyunsaturated fatty acids, such as Arachidonic acid etc. Mortierella alpina could be employed for industrial production due to its high production rate and flexible operation.Furthermore, it was considered as a GRAS organism. The research development was introduced for fermentation condition of Mortierella alpina and the effects of carbon, nitrogen, dissolved oxygen etc were especially emphasized.
