抗氧化肽及其化学活性测定方法的研究概述

Review on antioxidant peptide and its chemical activity assay methods

  • 摘要: 来源天然、安全性高的抗氧化肽是近十年来多肽领域的研究热点。本文对抗氧化肽的不同来源方式进行了综述,并分析了各方法的优劣性。此外,根据清除自由基化学反应的机制原理,将抗氧化肽体外化学的活性评价方法划分成两大类——基于氢原子转移的反应(HAT)以及基于电子转移(SET)的反应进行了分类概述,并对于细胞抗氧化活性评价方法(CAA)进行了介绍。本文可为深入开展抗氧化肽构效关系的研究奠定基础。 

     

    Abstract: Antioxidant peptides have been paid much attention in the recent ten years, due to their natural and safe properties.In the present review, the sources of antioxidant peptides were summarized and the advantage or disadvantages of the methods for antioxidant activity assay were compared. Besides, the chemical assays were classified into two categories including hydrogen- atom- transfer ( HAT) reactions and single- electron- transfer ( SET) reaction, based on the different reaction mechanism.Cellular antioxidant activity ( CAA) assay method was introduced here as well. The contents in this paper could supply useful information for further structure- activity relationship study of antioxidant peptides.
