Research progress in traditional ghee

  • 摘要: 酥油是中国传统乳品之一,国内外关于它的相关研究较少。本文详细介绍了酥油的加工工艺、营养价值、功能特性及最新的研究进展,为酥油的工业化生产提供理论依据,并对其应用前景和开发进行了展望。 

     

    Abstract: Ghee is one of the Chinese traditional dairy products and it was few reported all over the world. In this paper, the processing technic, nutritive value, function and the research progress of ghee were introduced, which could be the basis for further developing of ghee. Furthermore , theprospectofgheeapplicationwasalsopredicted.
