我国酶解法制备水产功能性肽的研究进展

A review on preparation of functional peptides from aquatic products by enzymatic hydrolysis in China

  • 摘要: 我国水产资源丰富,目前利用水产品制备功能性肽已成为我国水产资源精深加工领域的研究重点。文章对水产功能性肽的制备技术进行了概括,并着重综述了近年来我国采用酶解法从水产资源中制备抗氧化、抗疲劳、抗菌、抗肿瘤、降血压及调血脂等功能性肽的研究进展,同时对该研究领域今后的发展趋势予以了展望,旨在为水产功能性肽的研究与开发提供参考。 

     

    Abstract: Aquatic resources in China are abundant, and the preparation of functional peptides from aquatic products has become the research focus in the field of deep processing of aquatic resources. The preparation technology of the function aquatic peptides was summarized, and mainly reviewed the research progress of the functional peptides (antioxidant peptides, antifatigue peptides, antimicrobial peptides, antitumor peptides, antihypertensive peptides and antilipemic peptides) from aquatic products by enzymatic hydrolysis in China during recent years. Finally, the prospect of the future trends in this field was discussed, so as to provide references for the preparation of functional peptides from aquatic resources.
