显脉旋覆花的营养成分及营养价值评价

  • 摘要: 通过对显脉旋覆花不同部位的宏量营养素、矿物质营养素、维生素、脂肪酸等指标的分析,并与几种常见蔬菜进行了营养成分的比较,评价显脉旋覆花的营养价值。结果表明:显脉旋覆花不同部位营养成分不同,都富含蛋白质、亚油酸、α-亚麻酸、VB1、VB2、VB6、VC、钾、钙、镁、铁、锌和锰,而钠含量较低,且其平均营养价值很高。显脉旋覆花是一种综合营养价值较高,具有开发潜力和利用价值的可食性新资源食品。 

     

    Abstract: The macronutrients, trace nutrients, amino acid, fatty acid of Inula nervosa wall. were determined and compared with other vegetable species in order to evaluate the nutritional value of Inula nervosa wall. . The results indicated that nutrition constituent was different from different part, and Inula nervosa wall. was rich in proteins, linoleic acid, α-linolenic acid, vitamin B1, vitamin B2, vitamin B6, vitamin C, potassium, calcium, magnesium, iron, zinc and manganese, while the content of sodium was low, moreover ANV was very high. Therefore, Inula nervosa wall. was a kind of edibility new food resource with high comprehensive nutritional value and with development potential and utility value.
