微生物代谢黄曲霉毒素B1的研究进展

Research Progress on the Microbial Metabolism of Aflatoxin B1

  • 摘要: 黄曲霉毒素是由黄曲霉、寄生曲霉等真菌产生的次级代谢产物,主要存在于谷类、花生、玉米等农作物中。在我国尤其是南方省份,受高温高湿环境的影响,黄曲霉毒素在农作物上的污染极易发生,造成巨大的经济损失。利用微生物代谢黄曲霉毒素,具有专一、高效、反应条件温和等诸多优点,是目前公认的理想脱毒方法。本文首先简要介绍了黄曲霉毒素B1的形成过程、结构特征以及毒性基团,接着重点介绍了已报道的能代谢黄曲霉毒素B1的微生物种类、关键酶以及代谢途径,最后列举了应用基础研究的例子。

     

    Abstract: Aflatoxin, the secondary metabolites mainly produced by Aspergillus flavus and Aspergillus parasite, are the most commonnatural food contaminants in cereals, peanuts and corn. In southern China, aflatoxin contamination in crops is extremely severe under the humid and hot climate, which lead to substantial economic losses. Applying the strategy of microorganism biodegradation of aflatoxinis currently an ideal detoxification approach with highspecificity and efficiency and mild reaction conditions. Here, a brief review is presented to introduce the formation, structural characteristics andtoxic groups of aflatoxin B1. We focus on microorganism biodegradation of aflatoxin B1, introducing the key microorganisms, enzymes, metabolic pathways and practical application for biodegradation.
